Pumpkin Cupcakes
Ingredients:
20 oz. canned pumpkin
3 eggs
1/2 cup oil
2 tsp cinnamon
1 tsp baking soda
1 box yellow cake mix
1 can whipped cream cheese frosting (orange if available or white)
Mix together pumpkin, eggs, oil, cinnamon, and baking soda. add yellow cake mix and beat for 1-2 minutes. Fill cupcake liners 3/4 full with mixture and bake as directed on cake box, which should be 350 degrees for 12-17 minutes. Once cooled, ice cupcakes and top with Halloween sprinkles and candy corn. Optional: You can dye frosting orange or green if you can’t find colored frosting.
