Here are some yummy (and easy!) pumpkin recipes that are perfect for weekend brunch with your family during October:
PUMPKIN SPICE LATTE
In medium saucepan, combine 2 cups of sugar, 2 cups of water, 1/4 cup pumpkin, 2 cinnamon sticks, and 2 tsp. pumpkin pie spice, whisking for ten minutes as it simmers. Strain and serve (or can freeze and serve later) after adding 2 tbsp. coffee and warm milk (to suit your taste) then top with whipped cream with pumpkin pie spice sprinkled on top of it.
PUMPKIN PANCAKES
Whisk 1 cup of all purpose flour, 1 cup whole wheat flour, 1 tbsp. baking powder, 1 tsp. pumpkin pie spice, 1/2 tsp. salt, and 1/2 tsp. baking soda. In another bowl, mix 1 cup milk, 1/2 cup pumpkin puree, 3 tsp. brown sugar, 2 large eggs, and 2 tbsp. vegetable oil. Mix until smooth. Grease skillet and pour batter and cook until done, flipping once (should be golden on both sides). Drizzle with syrup and top with whipped cream ghost. To create ghost, add two chocolate chips as eyes to a good-sized dollop of whipped cream. For extra pumpkin goodness, try pumpkin butter (available at specialty stores).
